HELLO everyone! I’m Chef Lillian Elidah. I’ve been a culinary artist for 10 years now with hotel and restaurant experiences in France, Switzerland, Sweden, Dubai and Zambia.

The past years I’ve spent my professional life learning about the Zambian cuisine, food culture and history.

I’m also a mother who has to budget every month her family which brings me here.

I will be sharing with you #HomeAndFoodBudgeting to help with the current increment of groceries and how to eat healthy during this pandemic and on budget.

I will be starting with the basics like simple calculation like below

When it comes to food cost, it helps to look at this calculation to determine which one will be your essential. E.g. Beans.

1 meda beans weighs about 5kg which is 5000g and it costs us K210. So per kg it will cost us K42 kwacha. 210/5=42.

An average home will use about 2 cups of beans for 2-4 meals which more or less weighs 250g per cup which is 500g. We take 42/ 4 (4 the number of meals eaten from the beans) gives us K10.5 per meal beans only.  The total meals we get from one meda beans is 40.

5000g/500g=10×4(amount of meals) =40. 40×K10.50(cost of each meal) =K420

So from K210 we get K420 worth of meals which serves right because beans doubles in size when cooked. This is an estimate, I’m sure the figure is way more.

You’d want at this stage, to if possible; to increase the K420 to K840. You do this by stretching out your beans meals when cooking.

E.g. serve beans stew with carrots and green beans and eat with rice. (You might only need 1/3 cup)

When eating with nshima, serve beans with a filling vegetable like Impwa (garden eggs and eggplants). It’s all about strategy.

Beans to take long to cook. So soak them the day before and cook the following day. Just when it’s about right, portion the beans on plastic with the water and freeze, leave the one you will use.

When using the frozen bean bags, thaw in the fridge the night before. Make your tomato, onion sauce and put the beans. Let simmer for 15-20 minutes and done
